I love to cook pancakes, always trying out news recipes and here is the latest one I really loved…
… Tropical pancakes.
What do you need?
– 2 tbsp of coconut flour
– tbsp of vanilla whey protein
– 50g of cottage cheese half for the pancake and the other for the filling
– 4 eggs white
– vanilla powder
– 1 tsp of Backing powder
Mix all the ingredients with a whisk until batter is smooth and cook until small bubbles form and the outer edges look dry, (about 2-3 minutes on each side.)
I topped it with cottage cheese, pineaple coconut powder and goji.
